Uncle Joey's Rainbow Explosion makes cakes of all types and for all occasions. Traditional Rainbow Cookie Cakes, ones with cannoli filling, crumb topping, chocolate coating are our specialty, but we also do Strawberry Shortcakes, Exploding Candy Center cakes and pretty much everything else!
